- 1 1/2 libra ejotes (judias verde)
- 4-6 huevos
- 1/2 cucharadita harina
- 3-4 tomates maduros
- 1 pedacito de chile verde
- 1 trozo cebolla

- Primeramente vamos a cortarle las puntas a cada ejotes
- Ahora los agregaremos en una olla con agua y sal hasta que estén cocidos (no tan cocidos para que no se nos quiebren)
- Ya cocidos los ejotes los vamos a poner a escurrir.
- Ahora vamos a separar las yemas de las claras y batiremos a punto turrón.
- Cuando ya las yemas estén a su punto agregaremos las yemas y la cucharadita de harina y batimos para mezclarlo bien (es para que el batido se nos haga más sólido y no se nos deshaga tan rápido)
- Pondremos una cacerola con suficiente aceite (de su preferencia) a fuego medio alto.
- En la mezcla agregaremos unos cuantos ejotes haciendo que se llenen bien del batido.... con la manos agarramos la cantidad de ejotes que queremos y los echaremos en la cacerola hasta que se frían bien y liego con cuidado vamos a voltearlos para que se frían bien de los 2 lados.
- Al terminar de freír todos los rellenos los vamos a poner en papel absorbente para quitar exceso de aceite. Y ahora licuaremos los tomates, el pedazo de cebolla y el pedacito de chile verde con un poco de agua y licuamos hasta obtener nuestra salsa.
- Pondremos una olla con la salsa a hervir y cuando este hirviendo sazonamos con el consomé de pollo, sal y poquitito de pimienta.
- Cuando ya hayamos sazonado a nuestro gusto la salsa, vamos agregar los rellenos para que agarren el.sabor de la salsa por unos 3 -5 min y apagamos y servimos con arroz blanco y una rica ensalada.
- Nota: al batido de claras, yemas y harina le pueden agregar queso desmoronado si desean 😊 y a la salsa para que agarre color pueden agregar achiote😚😉🙄
