  11. 2 tazas agua
  12. 4 ajos
  13. 2 cucharadas aceite

  1. Primero lava el pollo y ponlo a cocer en 6 tazas de agua, la cebolla partida y el consomé.
  2. Aquí tenemos los ingredientes para el mole.
  3. Vamos a pelar las almendras. Pon agua a hervir, luego agrega las almendras por unos 3 minutos.
  4. Estila el agua caliente y ponles agua fría. Si ya no están tan calientes, fácilmente quítales la cáscara.
  5. En una sartén pon 2 cucharadas de aceite y dora las almendras. Reserva.
  6. Lava los chiles y jitomates. Ponlos a cocer en 2 tazas de agua.
  7. Muélelos junto con los ajos. Cuela esta salsa. De ser necesario agrega caldo en el que se coció el pollo.
  8. Luego muele las almendras con el caldo del pollo. Éstas no debes colarlas.
  9. En una sartén pon 2 cucharadas de aceite a calentar, agrega el mole. Menea, ve agregando el caldo del pollo. Prueba la sazón. Debe quedar semiespeso. Si es necesario agrega más consomé. Yo usé todo el caldo del pollo. Una vez cocido el mole, agrega el pollo. Deja que hierva unos 3 minutos. Sirve caliente acompañado de un buen arroz. Exquisito!!!
